Ingredients

  • 2 - Eggplant
  • 100g - Breadcrumbs
  • 50g - Parmesan
  • 200ml - Tomato Sauce

Instructions

  • - Slice eggplant and coat with breadcrumbs.
  • - Fry eggplant slices until golden.
  • - Layer fried eggplant with tomato sauce and cheese in a baking dish.
  • - Bake for 20 minutes or until bubbly.
