- 2 - Eggplant
- 100g - Breadcrumbs
- 50g - Parmesan
- 200ml - Tomato Sauce
Instructions
- - Slice eggplant and coat with breadcrumbs.
- - Fry eggplant slices until golden.
- - Layer fried eggplant with tomato sauce and cheese in a baking dish.
- - Bake for 20 minutes or until bubbly.
